Recipe of the Week: Turkey Pot Pie
Ingredients:
- Turkey: 2 cups cooked turkey, chopped or shredded (leftover turkey works well!)
- Onions: 1 medium onion, chopped
- Carrots: 2 medium carrots, peeled and diced
- Celery: 2 celery stalks, diced
- Corn: 1 cup
- Sweet peas: 1 cup
- Butter: 2 tablespoons
- Egg: 1 egg (for brushing)
- Water: 1 tablespoon (for egg wash)
- Gravy: 2 cups
- Biscuit dough: 1 can (about 8 biscuits) or enough homemade dough to cover the top of your baking dish
Instructions:
Step 1
Chop the onion, carrots, celery and turkey into bite-sized pieces.
Step 2
Melt 2 tablespoons of butter in a pan over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables soften and the onions start to turn translucent.
Step 3
Stir in the chopped turkey and 2 cups of gravy, and cook for another 3-4 minutes until the mixture is well combined and heated through, add more gravy if needed.
Step 4
Stir in 1 cup of corn and 1 cup of peas. Cook for 2-3 minutes until everything is heated.
Step 5
Pour the mixture into a 9-inch round or square baking dish.
Step 6
Place 8-10 pieces of biscuit dough on top of the filling, ensuring the entire surface is covered. If you're using homemade biscuit dough, roll out enough to cover the top of the dish.
Step 7
In a small bowl, beat 1 egg with 1 tablespoon of water, then brush this mixture over the biscuit dough for a golden finish when baked.
Step 8
Bake in a preheated oven at 375°F for about 20-25 minutes, or until the biscuits are golden and puffed.
Expert tip:
Chopped potatoes can be used instead of corn and sweet peas, depending on personal preference.
