Recipe of the Week: Turkey Pot Pie
Ingredients:
- Burger patties:
- 1 lb Special blend of brisket and short rib (available pre-made or blend your own)
- Salt (to taste)
- Pepper (to taste)
- White American cheese (2 slices per burger)
- Burger buns (2)
- Faithful sauce:
- Mayonnaise (½ cup)
- Ketchup (2 tablespoons)
- Sweet relish (1 tablespoon)
- Paprika (½ teaspoon)
- Cayenne pepper (optional, for extra heat)
- Jalapeno bacon onion jam:
- Bacon (about 4-5 strips)
- Jalapenos (2, chopped)
- Onions (1 large, caramelized)
- A small amount of water or stock (for pureeing to a jam-like consistency)
- Additional toppings:
- Lettuce
- Tomato
Instructions:
Step 1
Begin by preparing the jalapeno bacon onion jam. Cook the bacon until crispy, then chop it up. In the same pan, sauté the chopped jalapenos and caramelized onions until softened. Add the cooked bacon to the mixture and puree everything with a small amount of water or stock to achieve a jam-like consistency. Set aside.
Step 2
Make the faithful sauce: In a bowl, combine ½ cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon sweet relish, ½ teaspoon paprika and ¼ teaspoon cayenne pepper (optional). Mix well and set aside.
Step 3
Grill the patties: Preheat your grill or flat top. Season the brisket-short rib patties with salt and pepper. Grill the patties for 3-4 minutes on each side, or until they reach your preferred level of cooked (medium-well recommended).
Step 4
While the patties are grilling, toast the burger buns until golden brown.
Step 5
Once the patties are cooked, place a slice of white American cheese on top of each patty to melt.
Step 6
Assemble the burger: On the bottom of each toasted bun, spread a generous amount of the faithful sauce. Layer fresh lettuce and a slice of tomato. Place the cooked patty with melted cheese on top. Add a spoonful of the jalapeno bacon onion jam on top of the patty. Close with the top bun.
Expert tip:
For the best flavor, go light on the faithful sauce and add plenty of the bacon onion jam for a savory kick.
